Yuca En Escabeche is a Puerto Rican traditional pickled cassava that's delicious, vibrant and versatile. It's like a vinegary potato salad, but with yuca, olives and onions. This recipe holds up well and is a great appetizer or side dish for a beach picnic or backyard barbecue.

What is Yuca?

Yuca is similar to potato or taro. It looks like a large, round yam. The exterior is dark brown and the flesh is bright white. It is shaped like a large yam with a dark brown bark-like exterior and bright white flesh. In most Latin supermarkets, you can buy yuca in fresh, frozen or canned form. You can also find it in the frozen section of mainstream supermarkets.

What is Escabeche?

Escabeche, a preservation technique popular in Latin America, is an easy way to preserve food. Pickling cooked vegetables, fruit (such as green bananas) or fish is done by warming a simple mixture of oil and vinegar. The high acidity in the sauce allows the pickled foods to stay fresh for up to a week and develop deeper flavors with age. Yuca En Escabeche consists of boiled cassava roots smothered with escabeche and served at room temperature, hot or cold.

Prepare yourself for your new favorite summer treat! This recipe is perfect for a hot summer day. It comes together quickly and can be easily doubled, tripled, or quadrupled. This is one of the dishes that I make in large quantities and eat with everything. What you'll need to make Yuca En Escabeche is:

  • Yuca You can buy yuca frozen or fresh. Fresh yuca requires some preparation as you have to peel the bark off and quarter it in order to remove its core. I prefer frozen, because it is already chopped and peeled. You should defrost it, and check to see if the core has been removed. The canned yuca has already been cooked and prepared. Drain it and add to the escabeche.
  • Olive Oil and Distilled White Vinegar are the basis of the escabeche. Choose an olive oil with a flavor that you like. Although distilled vinegar has been used traditionally, you can use apple cider or rice wine vinegar. This recipe uses a ratio of 2 to 1. Use a 3:1 ratio if you prefer something less acidic. I like a more acidic escabeche, so I use a ratio of 1:1 oil to vinegar. You do you!
  • Bay Leaves and Adobo are spices that add a lot of complexity to escabeche. If you do not have adobo on hand, leave it out and increase the salt by 1/4 teaspoon. Add 1/4 teaspoon garlic powder, 1/4 tablespoon onion powder, and 1/4 spoon of cumin. If you don't have bay leaves, try substituting them with a pinch of dried oregano.
  • Garlic and Onions are integral to the escabeche. The dish is enhanced by their earthy flavor and texture. You can replace yellow onion with red or white onion. When exposed to highly acidic sauces, garlic can turn blue-green. Don't fret. Don't worry. Remove the blueish-hued slices of garlic if they make you feel uncomfortable.
  • Spanish Olives with Olive Brine These roasted red pepper-stuffed green olives (AKA Manzanilla) add a burst of tart and fruity tones, while the brine balances the acidity in the escabeche.

Variations on Yuca en Escabeche

Add your own spices, vegetables, and protein to this recipe.

  • Roasted red pepper strips are a delicious and attractive addition. Thin slices of green and red bells peppers are also delicious.
  • Mixing different vinegars will add complexity. Use white or light colored vinegar to preserve the yuca's color.
  • Add sliced hard-boiled eggs, shrimps, or chicken to the yuca for a heartier dish.
  • Add other vegetables like tomatoes, zucchini, squash or chopped zucchini. Although not the traditional choice, they are delicious.
  • Use different spices such as cumin oregano or cilantro.

What Can I Serve with Yuca En Escabeche

It is delicious on its own but even better as a side dish. It goes well with Roasted Chicken or Chuletas Guisadas.

How to Store Leftovers

Store the yuca inside an airtight container, with plastic over the top. Use a glass container if possible. Plastic will absorb the garlic and vinegar odors. Refrigerate up to one week. Freeze up to three months. Thaw the frozen yuca in the refrigerator overnight before serving. Yuca is served at room temperature or cold. If you want to serve it warm, heat it in the microwave until it is steaming.

  • 4 tsp kosher salt, divided $0.16
  • 2/3 cup olive oil $0.84
  • 1/3 cup distilled white vinegar $0.41
  • 3 bay leaves $0.30
  • 1/2 tsp black peppercorns $0.05
  • 1 tsp adobo seasoning $0.04
  • 1 yellow onions, sliced into half-moons $0.42
  • 8 cloves thinly sliced garlic $0.34
  • 1/4 cup sliced Spanish olives (AKA Manzanilla olives ) $0.33
  • 1/8 cup olive brine $0.09

Instructions

  • Peel and cut the yuca into four-inch quarters. Remove the center woody root. Split the yuca into four-inch halves if it is frozen. Remove the woody core and then slice each half in two.
  • Add yuca into a Dutch Oven or large pot with a heavy bottom. Add enough water to cover the yuca. Add two tablespoons of salt. Boil the yuca until it is tender but not mushy. This should take 25-30 minutes. Drain the yuca, and let it cool.
  • Set a small saucepan on medium heat while the yuca is cooking. Add the olive and warm. Add the vinegar, the bay leaf, the remaining 2 teaspoons of salt, the adobo (adobo), the peppercorns and the rest of the 2 teaspoons of salt, the onions, the garlic, the olives, the olive brine, to the warm olive oil. Stirring occasionally, cook for 10 minutes. Remove from heat.
  • Add the yuca into a large bowl. Cover the yuca after draining it with escabeche. Serve it after letting it sit for 30 minutes at room temperature to allow the flavors to develop.

How to Make Yuca En Escabeche: Step by step photos

Prepare 1 pound yuca. Peel and cut the yuca into quarters of 4 inches if it is still fresh. Remove the center woody root. Split the yuca into four-inch halves if it is frozen. Remove the woody core and then slice each half in two.

Add the yuca into a Dutch Oven or another large pot with a heavy bottom. Add enough water to cover the yuca. Add two teaspoons of sea salt. Boil the yuca until it is tender but not mushy. This should take 25-30 minutes. Drain the yuca, and let it cool.

While the yuca is cooking, place a small pot made of stainless steel or enameled over a medium heat. Aluminum pots should be avoided as acidic ingredients like vinegar can cause aluminum to leach out into the food. This leaves food with a metallic flavor. Add 2/3 cup olive oil, and warm. The oil should be warm, not hot. Add 1/3 cup vinegar, 1/2 teaspoon of peppercorns and 3 bay leaves to the warm oil. Also add 1 medium onion cut into half moons. Stirring occasionally, cook for 10 minutes. The onions will remain white, but will begin to wilt. Remove the onions from heat once they have wilted.

Add the boiled Yuca to a large pot and cover it with warm escabeche. Let the yuca pickle for at least 30 minutes before serving. Cover the bowl with plastic wrap and place it directly on top of the yuca to develop a deeper flavor. Refrigerate overnight. You can serve it cold, room temperature or in the microwave. Serve this dish with roasted chicken, guisadas or Puerto Rican rice and beans!
